crispy corn recipe | crispy fried corn | crispy corn kernels with detailed photo and video recipe. an interesting and popular fried snack recipe made with corn kernels and indo chinese sauces. the recipe was first introduced in the menu of restaurant chain barbeque nation as starter meal. but now it has been accepted by many other restaurant chains and also by several street foods and fast food vendors. crispy corn recipecrispy corn recipe | crispy fried corn | crispy corn kernels with step by step photo and video recipe. street food recipes or snack recipes are very common and a popular sought after a meal from a young and urban audience. these are generally quick, easy to make and more importantly lip-smacking in taste. it can be made with myriad options and one such popular and easy street food snack is the crispy corn recipe known for its crispiness and taste.
this is my second attempt with crispy corn recipe and i am revisiting as part of my clean up activity. the main reason i am revisiting the recipe is due to the fact that in my previous post the crispy coating was not uniform across the corn kernels. it was inconsistent and i was receiving the complaints from my readers. hence i am re-posting the recipe with a new crispy corn batter. my revisit was mainly towards the flour used as part of the coating. i have used equal proportions of corn and rice flour which makes it ideal for a crispy texture. whereas the plain flour helps to stick it to the corn even after the deep-frying process. typically the main issue while making the crispy corn recipe is non-stickiness of the coating to the kernels during the deep frying. but this recipe post should ideally tackle that issue.
crispy fried corn furthermore, i would like to highlight some of the tips, suggestions and variations to crispy corn recipe. firstly, in this recipe, i have used frozen sweet corn kernels which are already deseeded and also thawed. if you like to use fresh sweet corn kernels, you may have to de-seed it first and then boil in water. secondly, you can follow the same step and procedure with baby corn or tender corn shoots. you do not have to deseed them and use it as it is. lastly, the dish is served warm and it may lose its crispiness once it is rested. hence you can deep fry these with the coating and sautee it only when it is about to be served.

INGREDIENTS FOR BOILING: 4 cup water 1 tsp salt 2 cup sweet corn FOR FRYING: ¼ cup corn flour ¼ cup rice flour 1 tbsp maida / plain flour ¼ tsp pepper powder ¼ tsp salt oil, for frying FOR MASALA: ½ tsp kashmiri red chilli powder ¼ tsp cumin powder ½ tsp aamchur ¼ tsp salt 2 tbsp onion, finely chopped 2 tbsp capsicum, finely chopped 2 tbsp coriander, finely chopped INSTRUCTIONS firstly, in a large vessel boil 4 cup water and 1 tsp salt. add 2 cup sweet corn and boil for a minute. drain off the sweet corn to remove excess water. now add ¼ cup cornflour, ¼ cup rice flour, 1 tbsp maida, ¼ tsp pepper powder and ¼ tsp salt. mix well making sure the flour is coated well to sweet corn. sieve the mixture to remove excess flour. deep fry in hot oil making sure to keep the flame on medium. stir occasionally, and fry on medium flame until it turns golden brown. drain off over kitchen paper to remove excess oil. transfer the fried corn into a large bowl. add ½ tsp chilli powder, ¼ tsp cumin powder, ½ tsp aamchur and ¼ tsp salt. mix well making sure the spices are well combined. also add 2 tbsp onion, 2 tbsp capsicum and 2 tbsp coriander. mix well-combining everything well. finally, enjoy crispy corn recipe with tomato sauce.

1 medium size Cauliflower (Phool Gobi), broken into medium size florets
1/2 teaspoon Garlic Paste
1/2 teaspoon Ginger Paste
Oil, for profound singing
Salt
1/2 cup Water
For Sauté
1½ teaspoons Garlic Paste
2 teaspoons Ginger Paste
2 Green Chillies, finely slashed
1 enormous Onion, finely slashed
1 little Green Capsicum, finely slashed
1½ tablespoons Soy Sauce
1/2 tablespoon Chili Sauce
2 tablespoons Tomato Ketchup/Tomato Sauce
2 tablespoons Cooking Oil
2 tablespoons Spring Onion, finely slashed
Salt

  Chilli Idli is delicious and easy snack made using Idli in Indo-Chinese flavours. Idli is one of the most popular breakfast items in India, know more about Idli here.. and Indo-Chinese cuisine, a fusion between the Indian and Chinese flavors has made its own place in between the various Indian cuisines. Indo-Chinese snacks like Manchurian, Chilli Paneer, Chowmein are some of the most popular Indo chinese snacks that a favourite among all the age groups.
Chilli Idli gives a spicy makeover to the plain leftover idlis. It is also a great option for party snacks and appetizers. My family is loves Indo-Chinese dishes and  kids love to take Chilli Idli or Masala Idli for lunch. Another favorite Indo-Chinese version is Idli Manchurian. I always make extra idlis whenever I make Idlis with Sambhar and make either Masala Idli or Chilli Idli for the evening snack or dinner or packing in kids lunchbox.
Chilli Idli like Masala Idli can be prepared by using either the Idllis prepared by fermentation method or Instant Idllis. Many people like to deep fry Idlis for making Chilli Idli or Masala Idlli. But avoid deep-frying due to much of oil it absorbs and we like the non-fried version more, as it light on stomach too. You can adjust the level of spice in the dish as per requirement. Adding green chillies is also optional.
Let’s see how I make this Indo-Chinese version of Idli.. Chilli Idli
Chilli Idli
Chilli Idli recipe. A spicy Indo-Chinese version of Idlis. How to use leftover Idlis.Stepwise method for making spicy Indo-Chinese version of Idlis.
10-12 pieces Idlis
1/2 Cup Cubed onions
1 Cup Cubed mixed Bell Peppers
1 tbsp Finely chopped/crushed garlic
2 tbsp Olive Oil or any flavorless Vegetable oil
2 tbsp Soy Sauce
1 tbsp Chilli Sauce
1 tbsp Tomato Ketchup
1 tsp Brown Sugar
1/4 tsp Black Pepper powder
Salt to taste
Spring Onion Greens for garnish (optional)
Cut Idli into quarters. You can also make fresh idlis if you don’t have any leftover Idlis.
Mix all the sauces in the bowl and keep aside.
In a pan, heat oil and add garlic. Saute for few seconds then add onions.
Add cubed bell peppers and saute for 1-2 minutes. Do not overcook the bell pepper, keep it crispy.
Add sauces and mix . Add little salt, as it is already present in the sauces. Adjust the amount of salt as per your taste.
Add idli pieces and add to the pan and mix. take care not to break or mash the pieces.
Garnish with spring onion greens.
So whenever you have some leftover Idlis from breakfast or lunch do try this spicy version. Or, make some Instant Idlis to make Chilli Idlis for party or light weekend dinner.

A traditional Indian condiment that is now impossible to eat without is schezwan chutney.
Most young Indians would say Mint Chutney, Mango Chutney, Tomato Ketchup, Schezwan Chutney, and other condiments are essentials in their cuisine.
The chutneys made from mint and mango are OK, but what about schezwan chutney? Chinese cuisine uses a variety of sauces; they include soy sauce, chilli sauce, sweet and sour sauce, black bean sauce, and others; however, the Schezwan "Chutney" appears to be a more recent addition.
These days, you can get this "Indianized" schezwan sauce online in many metropolitan Indian kitchens because it has grown in popularity over the past several years. The majority of Chinese restaurants in India provide Schezwan Chutney, but only recently have young Indians begun to explore and swap out traditional condiments for "fusion" ones like Schezwan.

Firstly, what exactly is SCHEZWAN?
Schezwan is an abbreviation for the Southwestern Chinese province of Sichuan. The region of Sichuan is well-known for its hot cuisine, which uses a lot of Sichuan peppercorns. We Indians replace these peppercorns with Red Chilies, which are readily accessible and renowned for their mouth-numbing spiciness.
SCHEZWAN SAUCE AND SCHEZWAN CHUTNEY DIFFERENCE
Even though they both appear to be the same, they differ in a few ways. First off, whereas Schezwan Sauce is thin, silky, and sour in addition to being spicy, Schezwan Chutney is thick, gritty, and hot. Note- tbsp- tablespoon (15mL), tsp-tea spoon (5 mL)
FOR BOILING NOODLES:
6 cup of water
1 tsp salt
1 tsp oil
125 grams of noodles
OTHER INGREDIENTS:
2 tbsp oil
2 clove finely chopped garlic
1 inch finely chopped ginger
1 chili, slit
½ sliced onion
2 tbsp chopped spring onion
½ chopped carrot
ÂĽ chopped green Capsicum
5 chopped snow pea
5 chopped beans
ÂĽ chopped red Capsicum
5 florets broccoli
3 tbsp shredded cabbage
2 tbsp tomato sauce
1 tbsp soy sauce
1 tbsp vinegar
1 tbsp Orientasian red chilli paste
ÂĽ tsp pepper powder
Salt as per your taste.
INSTRUCTIONS:
First of all, take a large vessel and add 6 cup water, 1 tsp salt, and 1 tsp oil.
Please wait for the water to boil, and then add a pack of Hakka noodles (125 gm) into it.
Boil the noodles for approx. 3 minutes or till it turns al dente (cooked to be still firm when bitten).You may refer to the package instructions to know the exact cooking time.
Drain off the water from noodles and drizzle 1 cup of cold water to prevent it from overcooking.
Drizzle 1 tsp oil and mix it gently to avoid noodles from sticking to each other and then keep them aside to rest.
Now in a large hollow utensil heat 2 tbsp oil and saute 2 clove garlic, 1-inch ginger, and 1 chili in it.
Sauté ½ onion, 2 tbsp spring onion on high flame.
Further add ½ carrot, ¼ green Capsicum, 5 snow pea, 5 beans, chopped, ¼ red Capsicum, and 5 florets broccoli.
Stir fry on high flame for 2 minutes or until veggies are cooked yet retain their crunch and attain a smoky flavor.
Also, add 3 tbsp cabbage and stir fry it with the prepared mixture.
Further add 2 tbsp tomato sauce, 1 tbsp soya sauce, 1 tbsp vinegar, 1 tbsp Orienatsian Red Chilli Paste, ÂĽ tsp pepper powder and salt to taste.
Stir fry the mixture until sauces are well combined.
Add the boiled noodles and mix gently. Toss and mix them well until noodles are cooked thoroughly.
Finally, garnish some spring onion and enjoy your smooth and tasty vegan noodle recipe or say Manchurian noodle recipe.
Additional tips and cooking hacksMake your sauce
This may not sound like a “hack,” but its way easier to do than most people think. All you need are four ingredients garlic, olive oil, basil, and a large can of whole plum tomatoes. Use a salad spinner to rid the vegetables of their seeds before you get cooking. Heat six cloves of crushed garlic with some olive oil, add in the tomatoes and cook for 10 to 15 minutes. Add the basil at the very end. Here you have a very healthy and home-made red tomato sauce. To break down tomatoes in the sauce, smash them by hand, or use the same wooden spoon to stir it.You can also save your time and hassle and instead opt for our Momo sauce / Momo chutney.
Use the right amount of water.
Using too little water can cause noodles to clump while cooking, using six quarts of water for each pound of pasta. Use more water than you think you’ll need, but not so much that the utensil overspills while boiling.
Don’t add olive oil
Many people believe that adding olive oil to the water will keep the noodles from sticking together. Adding olive oil can also prevent the sauce from adhering, which keeps ingredients separate that should meld together.
Add salt at the right time
Only a pinch won’t do it. To truly bring out the noodles’ flavour, add one tablespoon of salt per quart of water. Wait until the water is boiling, but before you’ve put in the noodles. This allows the salt grains to infuse the water, devoid of affecting the boiling time.
Turn off the flame and cover the utensil
Rather than boil the water until the noodle is entirely ready, let the water arrive at boiling, turn off the heat, cover the pot and wait for seven minutes. This will help you save energy, and steam will enhance the flavor of your noodles.
Add some sugar to your sauce
A touch of sugar can help balance out the flavor of your sauce. Add a pinch of sugar to your sauce. It tones down the acidity and keeps it from tasting too bitter.
Use the pasta water
Doesn’t drain out that water, after you’ve transferred the noodles a splash of starchy pasta water on the noodles and sauce, will bind the two together.
